The triple crown of disgusting

Holy hell, I have no idea how anyone eats shit like liver mush, scrapple, and souse anymore. You know they make that shit out of the bits they leave on the butchering and killing floors. They sweep it all up, add fat to it, and toss it in a package to sell to some old timey inbred freaky Amish outcasts. Yuck.

My Dad was born and raised in Depression era Philadelphia. We lived in Upstate NY (Rochester) and took vacations through Philly to the South Jersey Shore. When I was 5-8 years old I loved my Dad like any little boy and wanted to be like him, so when offered Scrapple, I ate it, usually with lots of Ketchup on it. I recall it being served like sausage patties, and ttasting a bit like sausage though a bit more gamey. Then he told me it was made from hair, nails, brains and other leftovers and I never ate it again. He did. I guess going through the depression you ate what you could get and sometimes the choice of meat cuts was what it was.

There is an argument to be made for using all parts of the animal. If you are going to kill it, you might as well eat it all.

I guess I'm sheltered. I've never heard of souse or liver mush. Looks like the price is right.

I can see some old time fisherman using something like liver mush for catfish bait, but with names like "liver mush" and SCRAPle," good luck getting anyone under 75 to eat it. Still, change the packaging a bit, call it pate or New American charcouterie and that stuff would probably sell like hotcakes.

I've had scrapple. It's not bad if you fry it crisp. My uncle, however, likes it soggy, which I think is disgusting. It's a Philadelphia/southern PA/southern NJ thing. That said, apparently it's been said of scrapple that it is made of everything from the pig "except the oink." You are not missing anything by not trying it.
