Cooking with Dr. Monkey

Here's a meal I made one night last week.
********
I began it by quartering a white acorn squash and putting a spicy paste on it and baking it at 400 degrees. The spicy paste consisted of a tablespoon of black pepper, 1/2 tsp of salt, 3 chopped garlic cloves, a dash of cumin, a tsp of paprika, two tablespoons of brown sugar, and enough extra virgin olive oil to cover the spices. Then about 25 minutes after the squash started to cook I fried up 6 slices of lower fat bacon until it was crispy. Then I chopped about a dozen Brussels Sprouts in half and I put them on to par boil.
Next up I chopped some red and yellow bell pepper up and I sauteed it with some onion. Then I added the bacon and a cup and a half of milk to the frying pan. I then whisked in 3 tablespoons of flour and I stirred it until it was nice and gravy-fied. Then I added the Brussels Sprouts and I let it simmer for a few minutes.
I then made a salad and I took my now cooked squash out of the oven. I grated some Parmesan cheese and I stirred it in the simmering sprouts mixture in my frying pan. When the cheese had melted into the sprouts and bacon bits I served it all up and here's what it looked like:We toasted some of Sparky's homemade bread and we ate it all up. Damn, it was good.

This dish is a good way to incorporate Brussels Sprouts into your diet, those little bastard are packed with veggie goodness and I highly recommend them.

OK - I loathe brussel sprouts but I am tempted to eat this. How can you have made them appealing??

I freaking LOVE brussell sprouts!!! They are quite possibly my favorite vegetable...and saute'd with bacon is my favorite way to have them....good work my man, and homemade bread is my new schtick as well, so kudos to Sparky for banging that out.

mmmm. bacon.

I love sprouts too. I used to make a one pan chicken, shroom, sprout and onion dish when I lived by myself.

Everything tastes better with bacon! I've never had brussel sprouts but you almost make me want to try them.

LOVE the counter tops btw.
