We're trying to eat less meat this year, because meat production takes such a horrible toll on our planet, so from time to time I come up with meatless meals like this one.I started earlier today by peeling the three small white eggplant we had. I then sliced them and put some sea salt on them to draw out the water. When I finally began my dinner prep hours later I poured off the water and I set my eggplant aside. Next up I grated some Parmesan Reggiano, about a third of a cup, and I mixed it up with some bread crumbs, about a half a cup. Then I dredged the egg plant in some egg and then coated it with the parm and bread crumb mixture. After my frying pan, into which I had put about 3 tablespoons of canola oil, got nice and hot I began frying up my eggplant.
Next I took two smallish tomatoes, a couple of roughly chopped garlic cloves, a teaspoon of crushed black pepper, a dash of sea salt, and a glug of extra virgin olive oil and I cooked it all together. When it was done I pulsed in the food processor until it was smooth and then I set it aside.Then I chopped a small zucchini and a light green bell pepper. I sauteed them in some canola oil and I put about a half a teaspoon of Sicilian Herbs mix on the sizzling veggies. When these were cooking nicely I stopped cooking my eggplant and I put it on a plate.
Next up I got my other frying pan hot and I added a dash of oil, a squeeze of fresh lemon, and a teaspoon of soy sauce. When it was all nice and hot I put in some fresh asparagus and I sauteed it until it was just past the bright green stage, I hate mushy asparagus, it reminds me of the canned shit that I used to be forced to eat as a kid. That shit was so nasty it made me vomit but Aunt Rageaholic made me eat it anyway.
Just as all my sauteing was winding down I sliced a black tomato and I also sliced a sweet onion. I laid the tomato slices out on a plate and I topped them with the onion slices. Then I drizzled balsamic vinegar on them and then I added some crumbled up fresh goat cheese that is made just across the mountain from us. I served it all up and we chowed down. It was all quite tasty. The sauce was perfect on the crunchy eggplant and the sauteed veggies all had a nice al dente crunch. All in all this meal was damn good and no animals had to die so that we could eat it. I'll make a version of this again sometime soon.

You made eggplant parmesano my friend! Congratulations! Next time, diced up the eggplant and mix with bread crumbs, egg, garlic, parsley, etc like crab cakes, and fry in evoo, Hmmmmmmmmmmmmmmmm.
We don't eat red meat because it's wicked on our wallet.

That looks fabulous! I would have been tempted to add a few nuts and some bread to make it a little more balanced, but I sure wouldn't have complained about their absence if you made that for me.

Wow, an ideal summer meal. I usually dislike zucchini, but that looks like it could be tasty. The touch of balsamic vinegar is lovely. And by the way, are those your own tomatoes up there on your banner? They look real swell.
